Ingredients:

Directions:

  1. Cook rotini according to package directions, adding broccoli during the last minute of cook time.
  2. Drain and set aside.
  3. In a bowl, whisk together vinegar, salt, pepper and red pepper flakes.
  4. Continue whisking and slowly add the olive oil.
  5. Pour dressing over pasta and broccoli and toss.
  6. Add carrots, 1/2 cup basil, 1/2 cup red bell pepper, olives, parmesan cheese, green onions and cherry tomato halves.
  7. Toss to mix well.
  8. Garnish with remaining basil and red bell pepper.
  9. If time permits,refrigerate for 30 minutes prior to serving and toss again.
