Pamelas Garden Egg Scramble

Ingredients:

Directions:

  1. Saute peppers, shallot and tomatoes in EVOO with a dash of salt until tender.
  2. ****(You can really add any of your fave veggies right from your fridge or garden!)****
  3. Crack eggs into bowl and mix with a splash of milk
  4. Add eggs to veggie mixture and scramble over medium heat.
  5. Mix in cheese right before eggs are cooked completely
  6. Once cheese melts, remove from heat and serve.
  7. Top with salsa or hot sauce

  9. Serve with toast and fruit and you have a delicious, well balanced meal!
