  1. 1. While turkey cooks tear bread into small cube size pieces; place in a large pan at least 8 quarts in size, set aside.
  2. 2. In small saucepan over medium heat, cook celery and onions in hot butter until tender, about 10 minutes.
  3. 3. Mix parsley, salt, poultry seasoning, and pepper in small dish, add to cooked vegetables and blend well.
  4. 4. Stir mixture into bread cubes until well mixed, add broth mixing well. Add beaten eggs and mix until eggs are throughout the mixture.
  5. 5. This makes enough stuffing for an 8 to 11 pound turkey, about 8 cups.
  6. If you prefer (I do) bake the stuffing in the oven.
  7. 6. Preheat oven to 350* F. Place stuffing in a 9 X 13 inch glass or metal baking pan. Bake for 45 minutes or until golden brown, ENJOY.
