Directions:

  1. Roughly chop all vegetables and put into large ziplock baggie. Add olive oil and fresh herb. Close baggie and mix well. Pour into baking dish, cover and bake at 400 for 50 minutes to an hour. Serve as a side dish, or over rice or pasta as a main course.
