Oriental Watercress Soup

Ingredients:

  • 1 tbsp gingerroot (3 - 1/4 inch slices)
  • 2 large bunch watercress (2 cups)
  • salt and pepper

Directions:

  1. Heat broth and ginger to boiling in a large saucepan; reduce heat and simmer, covered, for 5 minutes.
  2. Remove ginger and discard.
  3. Trim stems from watercress and cut into 2 inch lengths. Add to soup and simmer, uncovered, 10-15 minutes.
  4. Season to taste with salt and pepper.
  5. Pour into bowls; sprinkle with green onions and carrots.
