Orange Tapioca

Ingredients:

  • 1-1/2 cups milk
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 1/2 cup orange juice
  • 1/2 tsp vanilla

Directions:

  1. Combine milk, egg, sugar, salt and tapioca in saucepan.
  2. Cook on medium heat stirring constantly until mixture boils.
  3. Remove from heat and add orange juice slowly stirring constantly.
  4. Return to heat stirring until mixture boils.
  5. Remove from heat and let cool stirring occasionally then mix in vanilla and diced orange.
  6. Chill before serving.
