Orange Rice Pudding

Ingredients:

  • 1/3 cup rice
  • 2 cups skim milk
  • 1 1/2 tbsp honey
  • 1/2 cup raisins

Directions:

  1. Pick, wash and soak rice in sufficient water for half an hour.
  2. Soak raisins in water for 15 minutes.
  3. Squeeze out excess water.
  4. Chop dates roughly.
  5. Finely shred orange rind.
  6. Boil milk in a non-stick saucepan.
  7. Drain and add rice to the boiling milk, reduce heat and cook, stirring continuously till the rice is soft and the milk is completely absorbed.
  8. Remove from heat and cool to room temperature.
  9. Combine cooked rice withhoney, raisins, vanilla essence, chopped dates, shredded orange rind and fresh orange juice.
  10. Pour into a medium-sized ceramic or glass ovenproof dish.
  11. Bake the pudding in the preheated oven at 160C degrees for 15 minutes.
  12. Serve warm or chilled.
