Ingredients:

Directions:

  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl, combine sugar,cornstarch,and salt in a small saucepan. Stir in orange juice and water until smooth.
  3. Cook over medium heat,stirring constantly,until thickened and bubbly.
  4. Reduce heat and cook for an additional 2 minutes.
  5. Remove from heat and slowly stir 1/4 cup of hot filling into egg yolks.
  6. Return all to saucepan.
  7. Stirring constantly,bring mixture back to a gentle boil,cook for 2 minutes.
  8. Remove from heat and stir in lime juice,orange peel and butter.
  9. Pour filling into crust.
  10. Beat egg whites and cream of tartar in a small mixing bowl on medium speed until soft peaks form.
  11. Gradually add sugar. Beat until stiff peaks form.
  12. Carefully spoon meringue over filling,sealing edges to crust.
  13. Bake for 12-15 minutes or until meringue is golden brown.
  14. Cool on wire rack for 1 hour the refrigerate for at least 4 hours before serving.
  15. Refrigerate leftovers.
