Ingredients:

Directions:

  1. Heat oven to 175. Celsius.
  2. Line a baking pan with heavy duty foil.
  3. Melt butter in oven in pan with foil.
  4. Meanwhile combine sugar, espresso powder, cinnamon and salt in a small bowl.
  5. Place egg whites in a medium bowl. Beat at high speed, scraping bowl often, until soft peaks form.
  6. Continue beating, gradually adding sugar mixture, until stiff peaks form.
  7. Gently stir in nuts and orange peel.
  8. Spread nut mixture into pan over melted butter, bake stirring every 10 minutes to thoroughly coat nuts with egg white mixture and butter for 25-30 mins or until nuts are browned.
  9. Cool completely before storing in an air-tight container.
