Ingredients:

  1. In a nonstick pan, 1/4 stick of butter, large dice cold boiled potatoes
  2. Fry till brown on 1 side, add 1/2 of the remaining butter and break the bread or cut into little squares, fry it with the potatoes, it will soak up the butter and become crisp, add more butter if needed. Salt and pepper to taste, about 1/4 tsp of each works I imagine as I don't measure usually.
  3. Parsley is optional I just like the different colors in a dish. That can be added at any time before getting to the eggs. Toss in your precooked meat and the rest of the butter, let it fry till everything smells delicious, then break the eggs over the top and toss it around till eggs are done. Its simple and very filling. Enjoy!
