Olives Molasses Cookies

Ingredients:

  • 1 cup shortening
  • 1 cup molasses
  • 1 cup brown sugar , packed
  • 4 cups flour
  • 1 tsp salt
  • 2 tsp ginger
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp cloves

Directions:

  1. Combine shortening (the original recipe calls for SPRY)
  2. Molasses , and Brown sugar in a saucepan.
  3. Bring to a boil over low heat and boil for two minutes.
  4. Remove from heat (fire) and cool to lukewarm.
  5. Add beaten egg and mix thoroughly.
  6. Sift together flour, salt soda and spices.
  7. Add to molasses mixture and blend well
  8. Pack tightly in an 8 x 8 greased pan and chill for several hours (if you are going to roll them out and cut them)
  9. If you want, you may roll the dough into cookie dough logs to be cut later into small round discs.
  10. Chill all for several hours and then either roll and cut the cookies out, or cut cookie discs from the dough logs.
  11. Sprinkle with sugar or sugar crystals and bake on greased cokie sheets for 10-15 minutes in a 350 degree oven.
