Old Fashioned Scrapple

Ingredients:

  • 2 cps. boiling chicken stock or boulion
  • 1 tbsp butter
  • 1/4 tsp course ground pepper

Directions:

  1. Bring chicken stock to a boil
  2. Mix cornmeal with cold water
  3. Pour into boiling stock
  4. Cook til very thick
  5. Mix in chicken, pepper and butter
  6. Pour into a loaf pan
  7. Cover with plastic wrap and refrgerate until completely cold and set.
  8. Turn out on cutting board
  9. Slice into 1/4 inch slices.
  10. Fry in two tbs olive oil til brown and crispy turning once.
  11. Serve with breakfast instead of bacon or sausage.
  12. Tis is delicious and very economical and is actually healthier for you than all that bacon and sausage. Enjoy
