Old Fashioned Date Confection

Ingredients:

  • 2 cups sugar
  • 1 cup whole milk
  • 2 tbsp butter
  • 1-1/2 cups chopped dates

Directions:

  1. Combine the sugar, milk and butter in a heavy saucepan.
  2. Stirring occasionally, cook over medium heat to soft ball stage (238°F on candy thermometer).
  3. Stir the dates and pecans into the syrup and continue cooking until dates are dissolved and mixture reaches firm ball stage (248°F on candy thermometer).
  4. Remove from heat and allow to cool.
  5. Pour mixture out onto clean, damp dishtowels or tea towels and shape into 2-inch diameter rolls.
  6. Chill until firm.
  7. Slice in half-inch slices.
