Old-fashioned Chocolate Pudding

Ingredients:

Directions:

  1. Mix first 5 ingredients in heavy medium saucepan.
  2. Add 1 cup milk and whisk to dissolve cornstarch.
  3. Whisk in remaining milk.
  4. Whisk mixture over medium heat until thickened and beginning to simmer, about 5 minutes.
  5. Simmer 1 minute, stirring constantly.
  6. Remove from heat.
  7. Stir in butter, vanilla and almond extracts.
  8. Divide pudding among 4 custard cups.
  9. Chill until cold, about 2 hours.
  10. Can be made one day ahead. Cover and keep chilled.
  11. To avoid a “skin” forming on the top of your pudding, cover pudding by putting a piece of wax paper directly onto the top of the pudding surface.
