Oh My  Bacon Double Fried Chicken

Ingredients:

Directions:

  1. Fried Chicken
  2. Wash and pat dry chicken
  3. Brush with lemon juice
  4. Sprinkle with garlic salt
  5. Combine flour, bread crumbs, paprika, salt, pepper, and cayenne pepper - mix well
  6. Coat chicken lightly in bread crumb mix
  7. Dip chicken in milk/cream
  8. Recoat in bread crumb mix
  9. Set on rack to dry for 15 minutes
  10. Fry bacon in large skillet, remove and reserve for Bacon Gravy (don't forget to reserve 3 Tbs bacon grease for bacon gravy)
  11. Add enough oil to bring bacon grease up to about 1/2-inch
  12. Over medium heat, lighty brown chicken a few pieces at a time
  13. When all is browned pour off half of grease
  14. Return chicken to skillet, reduce heat, cover and cook for 20 minutes
  15. Uncover and cook for another 10 - 15 minutes until done and crisp
  16. Serve with bacon gravy
  17. Bacon Gravy
  18. Heat 3 Tbs bacon grease
  19. Stir in flour
  20. Cook and stir until weel blended and flour turns a light brown
  21. Gradually stir in cream
  22. Season with hot sauce and brandy
  23. Bring to boil
  24. Stir in fried, crumbled bacon
  25. Remove from heat and serve
