Oatmeal Coconut Chip Cookies

Ingredients:

  • 3/4 cup. margerine
  • 1 cup. packed brown sugar
  • 1/2 cup. white sugar
  • 1 egg
  • 1/4 cup. water
  • 1 tsp. vanilla
  • 1 cup. flour
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. baking soda
  • 1 1/2 cup. oatmeal
  • 1/4. cup. chocolate chips
  • 1/4 cup. toffee bits (such as skor)

Directions:

  1. Beat butter with sugars till fluffy
  2. Add egg, vanilla and water, beating well.
  3. Combine flour, salt, cinnamon and soda. Blend in.
  4. Stirl in remaining ingredients, mixing well.
  5. Drop by rounded teaspoons onto baking sheet (I line mine with foil...easy to remove cookies, after they cool, and no need to wash after!)
  6. Bake at 350 degrees 12 - 14 minutes till lightly golden.
