Oatmeal Coconut Chip Cookies

I found the basis for these cookies in a cookbook a friend's mom gave me years ago...I've varied it to suit my tastes...just took a batch out of the oven, in fact. They are chewy, crisp on the edges and oh so good! Read more ! I vary the chips, as well, sometimes using bittersweet, or butterscotch, or whatever I have in the house.
Ingredients:
3/4 c. margerine
1 c. packed brown sugar
1/2 c. white sugar
1 egg
1/4 c. water
1 tsp. vanilla
1 c. flour
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. baking soda
1 1/2 c. oatmeal
1 1/2 c. unsweetened coconut
1/4 c. white chocolate chips
1/4. c. chocolate chips
1/4 c. toffee bits (such as skor)
Directions:
1. Beat butter with sugars till fluffy
2. Add egg, vanilla and water, beating well.
3. Combine flour, salt, cinnamon and soda. Blend in.
4. Stirl in remaining ingredients, mixing well.
5. Drop by rounded teaspoons onto baking sheet (I line mine with foil...easy to remove cookies, after they cool, and no need to wash after!)
6. Bake at 350 degrees 12 - 14 minutes till lightly golden.
