Oatmeal Buttermilk Waffles

Ingredients:

  • 1/4 cup cornmeal
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3 eggs
  • 2 cups buttermilk
  • 1./2 cup bacon drippings or melted shortening

Directions:

  1. In large bowl, stir together flour, cornmeal, oats, baking powder, baking soda and salt
  2. In separate bowl, mix together eggs, and buttermilk with fork.
  3. Pour over dry ingredients.
  4. Add bacon drippings and stir until dry ingredients are moistened.
  5. Por some of the mixture into preheated waffle iron until about 2/3 full
  6. Bake until golden and crisp about 4 min.
  7. Repeat with remaining batter
  8. Serve immediately
  9. Good served with maple or fruit syrup
