Ingredients:

  • 4 eggs
  • 1 cup of apple sauce
  • 2 tsp of vanilla essence
  • 2 tsp of cinnamon
  • 2 tsp of mixed spice
  • 1 tsp of baking powder
  • 3 cups of rolled oats

Directions:

  1. Pre-heat your oven to 180 celcius.
  2. Mix the eggs, apple sauce and vanilla
  3. Mix in the remaining ingredients
  4. Add fruit, berries, nuts, or any other flavours auch as coffee etc.
  5. Share the mixture between 12 muffins
  6. Bake for about 20 mins or until just starting to brown on top
  7. Turn them around at ten minutes
