North Carolina Tea Cakes

Ingredients:

  • 1/2 cup shortening
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 tsp vanilla extract
  • 3 1/4 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 cup milk

Directions:

  1. Cream shortening in a large mixing bowl; gradually add sugar, beating well. Add eggs, one at a time, beating well after each addition. Stir in vanilla.
  2. Combine flour, baking powder, and salt in a medium mixing bowl; add to creamed mixture alternately with milk, beginning and ending with flour mixture. Stir well after each addition.
  3. Turn dough out onto a lightly floured surface. Roll to 1/2-inch thickness, and cut with a 2 1/2- inch cookie cutter. Place 2 inches apart on lightly greased cookie sheets. Bake at 350° for 10 minutes or until lightly browned. Remove from cookie sheets, and cool on wire racks.
