North African Spiced Carrots

Ingredients:

Directions:

  1. Heat oil in a large nonstick skillet over medium heat.
  2. Add garlic, paprika, cumin and coriander.
  3. Cook stirring until fragrant but not browned.
  4. Add carrots, water, lemon juice and salt.
  5. Bring to a simmer.
  6. Reduce heat to low then cover and cook until almost tender.
  7. Uncover and simmer stirring often until carrots are just tender and the liquid is syrupy.
  8. Stir in parsley.
  9. Serve hot or at room temperature.
