New England Pumpkin Pie

Ingredients:

  • 6 tbsp brown sugar
  • 2 tbsp sugar
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp clove
  • 1/2 cup molasses
  • 1 1/2 cups light cream
  • 2 tbsp rum

Directions:

  1. In a mixing bowl, mix together the first 6 ingredients.
  2. Add in the molasses and egg yolks; mix well.
  3. Stir in the pumpkin, cream, and rum.
  4. In another mixing bowl, beat the egg whites until stiff; fold into the pumpkin mixture.
  5. Pour filling into the pie shell.
  6. Bake in a 425° oven for 45 minutes or until knife comes out clean (cover pie crust edges when appropriate to prevent over-browning).
