Nanas Nutty All Time Favorite Christmas Cookies

Ingredients:

  • 1 cup butter, room temperature (don''tsp substitute margarine, here.)
  • 2/3 cup confectioners'' sugar
  • 2 cups all purpose flour (don''tsp substitute self-rising; it will ruin the cookie.)
  • 1/2 tsp salt
  • confectioners'' sugar ' to roll cookies in

Directions:

  1. Preheat oven to 325.
  2. Cream butter.
  3. Add sugar and blend until light and fluffy. Add salt. Add vanilla extract.
  4. Slowly add flour, then stir in pecans.
  5. Mix well.
  6. Divide dough into three or four pieces. Shape each piece into a ‘log’ and wrap loosely with Saran Wrap. Flatten each ‘log’ to about 3/4 , and chill all four pieces.
  7. To shape cookies, make crosswise slices about 3/4 , then make one cut down width of entire ‘log’. You will have small, finger shaped cookies. Roll slightly in your hands ‘to take the edge off’.
  8. Bake on Ungreased cookie sheet for 15-25 minutes, until very light golden brown. DON’T BURN ~ they don’t brown like other cookies; these will be very light; when you make your first batch, check the bottoms for the golden brown color.
  9. Roll in confectioners’ sugar while still hot.
  10. Cool cookies on rack, then roll again when cooled.
  11. Enjoy these delights and all of the compliments you’ll get from making them!
  12. There are two secrets to baking these easy treats: 1) DON’T BURN. Check often during baking of first ‘log’ or two, until you get the hang of it. They are done when they’re VERY LIGHT BROWN. 2) Use real butter and real vanilla extract for these. It really does make a difference, and they are well worth it.
  13. I originally found these in my old Virginia Hospitality cookbook more almost twenty-five years ago. I’ve since added several touches of my own. I hope they become family tradition for you, too!
