My Mommy's Banana Bread

Ingredients:

Directions:

  1. Preheat oven to 350F and grease bread pan.
  2. (8 1/2 X 4 1/2) All ingredients should be at room temperature for best results.
  3. Sift the flour, then measure.
  4. Resift flour with baking powder.
  5. In a seperate bowl, beat shortening, sugar and lemon zest together until creamy.
  6. Beat in eggs and banana.
  7. Add the dry ingredients about 1/3 at a time, mixing to combine after each addition.
  8. Fold in nuts.
  9. Pour batter into the pan and bake about 50-60 minutes, until a toothpick inserted into the center of the loaf comes out clean.
  10. Let cool before slicing.
