My Husbands Favorite Polenta

Ingredients:

Directions:

  1. Set oven to 350F (325F if a convection oven)
  2. Soak the sun dried tomatoes in the wine for 10 minutes or so
  3. In an oven-proof sauce pan, keeping in mind that it will need to hold at
  4. Least six cups of 'stuff'
  5. Sweat the onion and celery in the oil with the salt
  6. When soft, add the garlic
  7. Chop the tomatoes and add them and the soaking liquid to the sweat
  8. Add broth and cream and bring to a boil
  9. Sprinkle on the polenta and bring back to a boil
  10. Put on a lid and cook in the oven for 20 minutes. (If you like your polenta
  11. More grainy, just lower the temp and cook on the stove. I like mine more
  12. Creamy.)
  13. Remove from the oven and stir in the cheese.
  14. Correct seasoning.
