Mussels and Sweet Leeks

Ingredients:

Directions:

  1. Melt butter and olive oil in a large pan.
  2. Saute leeks and garlic until very soft, about 5 minutes.
  3. Add wine and turn up heat, for about 1 minute, until alcohol smell disappears.
  4. Add cream and bring back to a boil.
  5. Add mussels.
  6. Cover and cook until all mussels have opened.
  7. Discard any mussels that remain closed.
  8. Serve in a large bowl with crusty bread.
  9. Enjoy!
