  1. Make the freezer your friend, and you'll get the most out of your meals.  Cooking larger portions and freezing is economical, freezing in individual portions means you can reheat just what you want to eat.  With a freezer stocked with a few favorite meals, you've always got dinner on hand.

  3. Freeze casseroles before or after baking.
  4. Bake frozen casseroles about 10-15 minutes longer than recipe specifies. (Keep a watchful eye as it bakes.)
  5. Fresh potatoes do not freeze well, nor do sour cream, half-and-half and ricotta and cottages cheeses.
  6. Cook meats, veggies and pastas just until tender as they will cook more during reheating.
  7. Add crisp toppings like nuts, crushed chips or bacon after the dish is thawed.
  8. Cool foods before freezing. Store at 0 F or colder.
  9. Freeze foods in sizes just right for your family. Individual servings are handy.
  10. Use airtight containers that can go from the freezer to the oven or microwave.
  11. If microwaving frozen casseroles, stir during reheating. For a dish like lasagna that can't be stirred, let stand to allow heat to equalize.
  12. Use frozen foods within 3 months.
