Ingredients:

Directions:

  1. Prick holes in potatoes and bake at 350 until they are done ( around 60 minutes)
  2. Fry bacon in a pan and remove when you achieved the doneness you like. saute onion, mushrooms in bacon grease until tender. ( i put both bacon, mushrooms and onion on paper towels when done cooking) Blanch the broccolli.
  3. Take 4 potatoes out of oven and slice lengthways sideways ( not a slit down the middle) rather hold knife and slice the length of the potato on the very top sideways. remove potato meat and transfer to a bowl. Make mashed potatoes with butter and milk to desired consistancy. Add the cheese( reserve 1/2 cup of cheese) and mix. Add , chive,broccolli, onion, mushrooms and cut up bacon pieces. Stuff this mixture back into each potato.Top with extra cheese and broil till cheese melts. Top with sour cream.
