  1. Preheat your oven to 375 f.
  2. Lightly oil a 12 cupcake/muffin tin.
  3. In a medium-largish mixing bowl, mix the soymilk and vinegar together and let them sit for a minute to get to know one another. when you can see the curdling action, add the wheat bran and mix them to moisten the bran. set it aside while you get everything else together.
  4. Melt the vegan margarine and the dark brown sugar together in a small saucepot over low heat, stirring till smooth.
  5. Add the margarine and brown sugar mixture to the wheat bran mixture along with the applesauce and vanilla. stir them together.
  6. In a separate bowl, sift the all purpose flour, baking soda and baking powder together. add the dry ingredients, by halves, to the wet ingredients and fold them in without over working the batter.
  7. Fold in the raisins or other dried fruit.
  8. Spoon the batter into the muffin tin and bake for 15-20 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let them cool enough to handle before you remove them from the tin.
