Ingredients:

  • 1 box(es) duncan hines butter recipe cake mix prepared as box says
  • 2 cup sugar
  • 1 cup milk
  • 1/2 stick butter

Directions:

  1. With ice pick, puncture soft spot on coconut to make a hole. Drain milk from coconut and set aside. If out for any length of time, refrigerate this milk.
  2. Put coconut in 350 degree oven for 15-20 minutes. Take outside on concrete and with hammer, crack. Peel brown off of coconut. Grate with the finest grater you have. The finer, the better.
  3. Bake cake as directed. Two 9 inch cake layers is what I usually do. Cool 15 minutes and take out of pans. Cool slightly.
  4. Prepare icing. Boil 2 cups of sugar with 1 cup of milk. Boil until it almosts spins a thread. When it almost spins a thread add the 1/2 stick butter and vanilla.
  5. Place one layer of cake on your cake plate. Fork holes in the cake and drizzle with 1/2 of the coconut milk. Drizzle some icing and fresh coconut and some more icing. Repeat with 2nd layer.
  6. Then you have your most unique, delicious coconut cake!
