Ingredients:

  • 2 cups sugar
  • 1/3 cup cocoa
  • 1 1/2 cups butter, softened
  • 4 eggs
  • 1 1/2 cups flour
  • 1 1/3 cups flaked coconut
  • 1 1/2 cups pecans, chopped
  • 1 (7 oz) jar marshmallow creme
  • 1 lb confectioners' sugar
  • 1/3 cup cocoa

Directions:

  1. Preheat oven to 350F and grease/flour a 13 x 9 cake pan.
  2. In a mixing bowl, cream sugar, cocoa, and butter, until light and fluffy.
  3. Add eggs, one at a time.
  4. Add vanilla extract.
  5. Mix well.
  6. Stir in flour, coconut, and pecans.
  7. Pour into prepared pan.
  8. Bake 40 minutes.
  9. When done, spread marshmallow creme over top.
  10. Cool before frosting.
  11. Make frosting: Sift together confectioners' sugar and cocoa.
  12. Set aside.
  13. Cream butter in a mixing bowl.
  14. Add sugar-cocoa mixture.
  15. Fold in evaporated milk and vanilla extract.
