Mint Chocolate Chip Muffins

Ingredients:

  • 1 1/4 cups flour
  • 1/4 tsp salt
  • 1/4 cup cocoa powder
  • 3/4 cup sugar
  • 1/4 tsp cinnamon
  • 1 egg
  • 1/4 cup corn oil
  • 2/3 cup milk
  • 1 cup mini chocolate chip

Directions:

  1. Preheat oven to 375 degrees.
  2. In large bowl, sift together flour, baking powder and salt. Stir in cocoa, sugar and cinnamon.
  3. In medium bowl lightly beat the egg. Stir in the corn oil, milk and mint extract.
  4. Add the egg mixture to the flour mixture and stir in the chocolate chips. Stir just until the dry ingredients are moistened.
  5. Fill greased muffin tins.
  6. Bake for 18 minutes or until a tester comes out clean.
