  1. In a measuring cup, mix yeast, 1/4 cup warm water and sugar. Set aside for 3 minutes.
  2. In a large bowl combine, 1 1/4 cups of the flour, the yeast mixture and salt. Add the remainning warm water and oil. Mix well with hand or electric mixer. Using a spoon, stir in as much of the remaining flour as you can, turn out onto a lightly floured surface and knead in enough remaining flour to make a smooth and elastic dough. Divide in half, cover and let rest for 40 min. Mean while prepare pizza sauce.
  3. Pizza Sauce: In a saucepan, saute onion until brown. Put oil and add garlic, oregano, basil and rosemary and fry for 2 min until it gives fragrance. Add tomato paste and stir for 3 min then add sugar, tomatoe juice, salt an pepper. Bring to boiling, reduce heat and simmer for 15-20 minutes.
  4. Pizza: On a lightly floured surface, roll each half of dough and using cups or cutter, shape out minni circles. (The remainning cut out dough can be rolled again without kneading). Place them on a greased baking sheets and let rise for 5 min. Bake in 180 degree Celsius about 5 minutes. Spread Pizza Sauce over hot crust, sprinkle the toppings and cheese atop. Bake 10 minutes more.
