Ingredients:

  • 1 cup water
  • 1 stick margarine or butter
  • 1 cup sifted all-purpose flour
  • 4 eggs
  • filling
  • 3 cups milk
  • 3/4 cup sugar
  • 1/2 tsp salt
  • 3 eggs
  • 2 tsp vanilla
  • 2 cups sugar

Directions:

  1. Preheat the oven to 400 degrees.
  2. Heat water and margarine or butter to boiling point.
  3. Add flour and stir constantly until mixture is smooth and
  4. Forms a ball when tested in cold water.
  5. Remove from heat and let cool. Beat in 4 eggs, one at a time.
  6. Drop dough from teaspoon to form small eclairs onto greased
  7. Cookie sheet. Bake for approximately 30 minutes or until light brown.
  8. Set aside to cool.
  9. Prepare filling by combining milk, sugar, salt and flour; cook slowly
  10. Until thickens.
  11. Add 3 beaten eggs and continue to cook until mixture is even thicker.
  12. Remove from heat, cool and add vanilla.
