Ingredients:

Directions:

  1. Heat olive oil in pan over medium. Add onion and saute 4 to 5 minutes.
  2. Add carrots and cabbage. cover and cook until they wilt, 5 minutes.
  3. Add tomatoes with juices and at least 4 cups stock. Bring to a boil and simmer covered 10 minutes.
  4. Add zucchini and beans. Simmer 10 minutes.
  5. Season with salt and pepper to taste.
  6. Remove from heat and add chopped basil or parsley.
  7. Serve over pasta elbows and add parmesan cheese.
