Ingredients:

  • 1 cup long grain white rice
  • 1 lg tomato or 1 - 14oz can diced tomatoes
  • 1 cup carrot
  • 1 cup cellery
  • 2 - 14 oz cans chicken broth
  • 6-8 cloves garlic (or more to taste)
  • 2 tblspoons cumin
  • 2 tblspoons olive oil

Directions:

  1. Skin and de-bone chicken. cut into 2 inch pieces. arrange in the bottom of a 9x13in baking dish.
  2. Dice the carrot, onion, cellery, garlic and tomato.
  3. In a large skillet, saute uncooked rice, garlic, onion, carrot and cellery in the olive oil. continue until the rice begins to turn brown.
  4. Stir in the tomato.
  5. Add the chicken broth.
  6. Stir in the Cumin and let the broth heat until simmering.
  7. Taste test the broth and add more Cumin if desired.
  8. Pour the mixture over the uncooked chicken and cover tightly with foil.
  9. Cook in a 350deg oven for 1hr and 15 min. the liquid should all be evaporated when the dish is done.
