Ingredients:

Directions:

  1. Saute onions, celery, and bell pepper in butter until tender.
  2. Place broth,rice, onion mixture, tomatoes, spices,black olives and picante sauce in rice cooker.
  3. Cook rice in rice cooker until rice cooker goes off, if you do not have a rice cooker cook on stove top by bringing to a boil, cover and reduce heat to low, cooking about 15 to 20 minutes or until rice is done.
  4. Fluff rice with a fork, adjust seasoning with salt and pepper.
  5. Place rice in serving dish.
  6. Garnish or Serve with extra chopped tomatoes, green onions, sour cream and shredded cheese on the side if desired.
  7. *for more of a tomato based rice, warm 8 oz. of tomato sauce in microwave.
  8. Add to cooked rice before serving.
  9. * You can also sub 1/2 cup of burgundy wine for 1/2 cup of the broth if desired.
