Directions:

  1. Preparing the tortillas:
  2. On a fry pan add the oil and fry the tortillas and when they are crisp, remove and place them on sheets of paper towels to remove excess oil.
  3. Egg preparation: (your choice) I prefer them sunny side up or omelet style.
  4. Preparing the sauce:
  5. On a sauce pan you will cook/boil the tomatoes. Once they are soft you will remove the skin add the water where you cook them and blend. Add the Knorr chicken powder to taste. Make sure the sauce is not to watery.
  6. On another sauce pan you will add 1 TBS of oil and sauté the onion and jalapeños.
  7. Once the onion and jalapeños are sauté add the tomatoes sauce, cilantro and pepper and bring to a medium boil.
  8. Serving:
  9. Sit the tortilla in the center of a flat plate rest the egg on top of the tortilla and finally add the sauce (as much as you want) decorate with the sour cream, avocado and chives on top.
  10. This breakfast go's great with a side of re-fried beans.
