Merryfield Apple Cake

Ingredients:

  • 3 cups flour
  • 2 cups sugar
  • 1 cup canola oil
  • 1 tsp salt
  • 2 tsp vanilla
  • 3 eggs
  • confectioners' sugar

Directions:

  1. Preheat oven to 325°F.
  2. Grease and flour two 8x8-inch square pans.
  3. Mix first 7 ingredients with mixer on low.
  4. Beat 3 more minutes.
  5. Stir in apples, nuts and raisins.
  6. Spread in pans, bake 1 hour.
  7. Cool.
  8. Place paper doily on top of cake.
  9. Sprinkle with confectioner's sugar.
  10. Remove doily.
