Ingredients:

  • 1/2 cup cornstarch
  • 1/2 cup chopped pecans - try using missouri pecans - much smaller and sweeter than regular pecans

Directions:

  1. Preheat oven to 300 degrees
  2. In a mixing bowl cream butter
  3. In another bowl combine flour, cornstarch and sugar
  4. Add flour mix to butter and mix well
  5. Stir in pecans
  6. Roll into 3/4 inch balls place on cookie sheet and flatten slightly
  7. Bake at 300 degrees for 20 to 25 minutes - the cookies should not brown but remain pale
  8. Cool on wire racks and dust with confectioners sugar
  9. Try not to eat all of them at once....
