Ingredients:

Directions:

  1. Preheat oven to 400 degrees Fahrenheit. If making homemade dough, prepare pizza dough according to directions (I use Wolfgang Puck's pizza dough recipe, always).
  2. Combine all filling ingredients in large bowl. See Photo
  3. On a lightly floured board, pinch off about 25 (1-inch) balls of dough and flatten slightly, filling the middle with desired amount of filling (be careful to keep a good ratio of filling to dough as you don’t want the bites to be too doughy). Wrap dough around filling and roll into a ball, placing in pachment lined, large round pizza pan See Photo. Repeat with remaining dough.
  4. Combine garlic, parsley, and red chile flakes in olive oil and brush or drizzle over the pizza bites See Photo. Sprinkle with parmesan cheese. See Photo
  5. Bake in oven for 15 to 20 minutes or until top is nicely browned (they smell AWESOME as they are baking!).
  6. Notes:
  7. You can substitute in any type of “toppings” you want instead of the above, like pepperoni/sausage. It might be a good idea if using vegetables like onions, green peppers or mushrooms to sauté them a little before using as the filling.
