Mediterranean Olive Oil, Orange, and Almond Cake

Ingredients:

  • 2 eggs
  • 1 cup sugar
  • 1/2 cup olive oil
  • 3/4 cup milk
  • 1 1/4 cups flour
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 tbsp orange zest
  • 1/3 cup slivered almonds

Directions:

  1. Mix together wet ingredients plus sugar and zest.
  2. Add dry ingredients (reserving the marmalade and almond slivers).
  3. Bake 30 minutes at 375°F.
  4. When unmoulded, melt the marmalade and spread over the cake.
  5. Toast the almonds briefly in a dry skillet and distribute on top of the cake.
