Ingredients:

Directions:

  1. Cube and cook chicken in skillet until cooked through.
  2. Use 2 mm (smaller slicer) slicing disc of food processor to slice fennel. Remove to large mixing bowl.
  3. Once chicken is cooked, pulse chicken, olives, & onions in large food processor bowl w/ multi-purpose blade 4-6 times for 1-2 seconds each pulse, or until coarsely chopped. Add to fennel in large mixing bowl.
  4. Exchange slicing disc for mini bowl and mini blade in food processor. Add all remaining ingredients except cheese. Process until mixed (about 10 to 12 seconds). Add to mixing bowl.
  5. Add cheese to mixing bowl and stir to combine.
  6. Serve with pita, flatbread, or lettuce wraps.
