Ingredients:

Directions:

  1. Preheat oven to 350°F.
  2. Light coat a 8in square pan with oil.
  3. Grate potato.
  4. Thinly slice onion diagonally.
  5. Cut tomato into rounds.
  6. In a large bowl, whisk eggs with seasonings.
  7. Add potato and onion.
  8. Crumble in feta, stir until mixed.
  9. Turn into baking dish and stir to evenly distribute ingredients.
  10. Top with tomato rounds.
  11. Bake, uncovered, in oven until middle is set, about 30-35 minutes.
  12. Let stand 5 minutes then slice and serve.
