Mashed Red Potatoes

  • 5 large red potatoes
  • 1/4 cup butter
  • 2 tbsp sour cream
  • 1/2 cup milk (more or less depending on texture wanted)
  • salt and pepper


  1. Place scrubbed potatoes wrapped loosly in damp paper towel in the microwave - cook for 3-4 minutes at a time until done .approx 12 mins total - they are done when a butter knife slides through them easily.
  2. While potatoes are cooking place butter in a mixing bowl.
  3. When potatoes are done place on top of butter in bowl and chop coarsly using 2 butter knives in a criss cross pattern.
  4. Add cream cheese, sour cream , dill, salt and pepper to bowl and mash - add milk in while mashing until desired texture is reached.
