Ingredients:

Directions:

  1. Cream sugar and shortening; add eggs, vanilla and carrots; mix well.
  2. Put all dry ingredients in a seperate bowl - mix together and add to wet mixture slowly.
  3. Stir in coconut.
  4. Bake at 375 degrees for 10 minutes.
  5. Whip together the icing ingredients and frost when cooled.
