Ingredients:

  • 1/2 cup soft margarine or 1/2 cup butter
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1 large egg
  • 3 tbsp maple syrup
  • 1/2 cup pumpkin puree
  • 2 cups flour
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp salt

Directions:

  1. Cream margarine and sugars together until light and fluffy.
  2. Beat in egg, maple syrup and pumpkin.
  3. Mix together flour, baking soda, cinnamon, nutmeg and salt.
  4. Stir flour mixture into creamed mixture in thirds.
  5. Drop heaping tablespoons of dough on cookie sheet.
  6. Bake at 350°F for 10-12 minutes.
