Mandarin Orange Vinaigrette

Ingredients:

  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp honey
  • 2/3 cup vegetable oil

Directions:

  1. Drain the oranges and put them in a blender or food processor. Add the vinegar, salt, and black pepper. With the motor running, add the honey and oil in a thin stream through the feed tube. Process until thoroughly blended.
  2. Serve at once or cover and refrigerate until ready to serve, up to 2 weeks. (If the dressing separates while standing, shake it well to recombine before serving).
