Mama Mia Its Hot Weather Cake

Ingredients:

  • 1/2 cup shortening
  • 1 egg
  • 1 egg yolk (egg white used later)
  • 1 1/3 cups cake flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp cloves
  • 1/2 tsp cinnamon
  • 1/2 cup soured milk
  • frosting
  • 1/2 cup brown sugar

Directions:

  1. Cream shortening with brown sugar.
  2. Beat egg with egg yolk and add to creamed mixture.
  3. Sift together cake flour, salt, baking soda, baking powder, cloves and cinnamon.
  4. Add to creamed mixture alternately with milk
  5. Grease and flour an 8 X 8 or 9 X 9 pan and line with waxed paper well up on sides of pan.
  6. Turn batter into pan.
  7. Make topping by beating egg white until stiff, then beating in brown sugar, adding a little bit at at time while beating.
  8. Spread over cake batter.
  9. Sprinkle nuts on top.
  10. Bake at 350 degrees F for 40 minutes or until done.
