Ingredients:

  • 1 cup sugar
  • 1/2 cup corn syrup
  • 1/4 cup water
  • 2 tbsp butter
  • 1 tsp vanilla
  • 1/2 tsp baking soda
  • 1/2 cup coconut

Directions:

  1. Butter cookie sheet and large saucepan.
  2. In buttered saucepan, combine sugar, corn syrup and water, mix well.
  3. Bring to a boil, stirring constantly.
  4. Cook until candy thermometer registers 275 (soft-crack stage).
  5. Add butter, vanilla and nuts; cook, stirring constantly, until thermometer registers 300 (hard-crack stage).
  6. Remove from heat.
  7. Add baking soda; mix well.
  8. Stir in coconut.
  9. Quickly pour mixture onto buttered cookie sheet; spread very thinly.
  10. Cool 30 minutes or until completely cooled.
  11. (After 5 to 10 minutes of cooling, brittle can be stretched thinner with 2 forks.).
  12. Break into pieces.
